Profile:

Delicious Montmorency cherry co-fermented with Wildflower honey, we added Hibiscus for some ruby tartness and rosehips for some medium length tannins.  Bright, with a full mouthfeel, we built this light sparkler to provide lasting refreshment and pair well with food.

We are in love with ginger and are proud to bring the heat with this mead. Using Wildflower honey, we co-fermented this mead with pineapple for a juicy body and lemongrass for a touch of smooth tannins.  Using a mix of fresh and dried ginger, this mead is crisp, naturally gluten-free and packs the ginger twang all ginger lovers crave.

Profile:

Wildflower honey co-fermented with pineapple and dry-hopped with Centennial, Cascade and Simcoe hops.  This draft mead exhibits balanced tropical undertones with citrus hop overtones. Mostly dry and naturally gluten-free, this is an easy-drinking mead reminiscent of a New Zealand-style Sauvignon Blanc.

After squeezing so many oranges for our test taps, we dubbed this mead the Bee’s Squeeze.  Off-Dry, the blend of raw honey, oranges and high-tone basil has a full-mouth feel with enough acidity to keep it clean. Oranges pulped, rinds rubbed and basil a’bathing, this mead quenches our thirst; a small-batch mead, delivered fresh to your glass.

We invite all inquisitive souls to join us as we wait for the sleeping elixir to awaken.

A mixture of raw wildflower and bouchet honeys, with over 100 lbs of Imperial pumpkin, spices, the delightful heat and smokiness of Chipotle, aged for a year on rum-soaked oak; this is everything we wanted out of fall mead. Profile:

Eighty-four pounds of Blackberry (Rubus occidentalis) purée co-fermented with wildflower honey and Mission Fig concentrate, we are super excited by this mead.  It is simply delicious with layers of rich, dark berries and underlying notes of tobacco and leather.  We also layered in some fine oak tannins to give length to the finish.

If this test tap goes as well as we suspect, this mead may make either a can debut or get bumped to 10-11% ABV and be bottled as a winter warmer, or both!

Profile:

The orchard is in full swing.  Here we fermented a mix of Pear, Apple, Cherry and Mango juices and purees with our classic Wildflower Honey blend.  The combination comes out with a classic fruit-forward, summer appeal. To round out the flavors and finish, we used a pinch of Himalayan Pink Sea Salt.  Riding the line between Off-Dry  & Semi-Sweet, it is an easy drinking, gluten-free mead to compliment a warm Colorado summer.

Profile:

Co-fermenting local Colorado Wildflower honey with cherry and vanilla, we aged this mead on Bourbon soaked oak.  At low temps, the cherry is muted but let this slowly warm in the glass and you will find more layers to explore.  Off-dry this mead maintains a refreshing profile while still appealing with a touch of honey. The silky tannins of oak provide a smooth finish that let’s the boozy vanilla linger on your palate.
